Strawberry and saffron jam

 I have always taught that preparing a jam is so special, that is almost magic. That  time of the year, in autumn, when my grandmother and mother start to prepare fruits and vegetables for winter. Fruits are transformed into jams, vegetables are pickled or for example, from peppers they make the famous Serbian dish, in form of a spread, called “ajvar”. But jams, those have always been a mystery for me. Until recently. This autumn I made my first jam, from figs, that also became my favorite fruit recently, but that is a story for another time… Important thing is that jam is, maybe, the easiest thing to make, you just need a lots of fruit, and sugar, and that is optional.

 Usually, my grandmother makes jam from plums, but I love all of them. I should confess, I am greatest jam eater in my family. Jam with toast, jam with pancakes, jam with croissants, and so on.. But, we have never had homemade strawberry jam, only bought. Perhaps it takes a lots of fruit to make a decent amount. Also, you can not compare taste of homemade jam and industrial one, it is two different stories. And the best thing about jams, that I found out from my friend, is that you can add, besides the fruit and sugar, spices into them and make even better tastes. Wonderful.


/Džem od jagode sa šafranom/

 Uvek sam mislila da je pravljenje džema tako specijalno, da je skoro kao magija. Pogotovo to doba godine, u jesen, kad baka i mama počnu da pripremaju voće i povrće za zimu. Voće se transformiše u džemove, povrće se kiseli ili na primer, od paprika se pravi poznato srpsko jelo, u obliku namaza, zvano “ajvar”. Ali džemovi, oni su oduvek bili misterija za mene. Sve do skoro. Ove jeseni sam napravila svoj prvi džem, od smokvi, koje su isto tako nedavno postale moje omiljeno voće, ali to je priča za neki drugi put… Važna stvar je da je džem, možda, najlakša stvar za pravljenje, treba vam samo gomila voća i šećer, i to zavisi od ukusa.

 Obično, moja baka pravi džem od šljiva, ali ja ih volim sve. Trebalo bi da priznam, ja sam najveći potrošač džema u mojoj porodici. Džem na tostu, džem na palačinkama, džem sa kroasanima, i tako u svim mogućim kombinacijama.. Ali, nikada nismo imali domaći džem od jagoda, samo kupovni. Najverovatnije, jer je potrebno jako puno voća da biste dobili pristojnu količinu. Takođe, ne mogu se poredititi domaći i industrijski džem, to su dve potpuno različite priče. A, najbolja stvar u vezi džemova, koju sam sazanala od svoje prijateljice, je da im se mogu dodavati, pored voća i šećera, začini, koji ukuse čine još boljim. Divno.

 Šafran je poznat po svom aromatičnom, pikantnom i ponekad gorkom ukusu. U upotrebi je već 5000 godina, i jedan je od najskupljih začina na svetu. Jela sa ovim začinom mogu da dobiju pored svoje boje i zlatnu nijansu.
